Quick Lemony Herbed Millet



  • 200g Millet, rinsed & drained
  • 7g fresh parsley finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper


  1. Put millet and 2 cups of water in a medium-sized saucepan. 
  2. Bring to a boil, then close the lid, reduce the heat and let it simmer. 
  3. Cook for around 12-15 minutes until the millet is fluffy and has absorbed all of the water.
  4. Stir in the fresh parsley, mint, lemon juice and lemon zest. Season with a good pinch of salt and pepper to taste.
  5. Serve warm with your favorite mains and sides!

Serve your herbed millet warm with vegan ratatouille, in nourish bowls or veggie bowls, as a filling for stuffed peppers
