Ingredients
- 200g Millet, rinsed & drained
- 7g fresh parsley finely chopped
- 2 tbsp fresh mint, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper
Instructions
- Put millet and 2 cups of water in a medium-sized saucepan.
- Bring to a boil, then close the lid, reduce the heat and let it simmer.
- Cook for around 12-15 minutes until the millet is fluffy and has absorbed all of the water.
- Stir in the fresh parsley, mint, lemon juice and lemon zest. Season with a good pinch of salt and pepper to taste.
- Serve warm with your favorite mains and sides!
Serve your herbed millet warm with vegan ratatouille, in nourish bowls or veggie bowls, as a filling for stuffed peppers
