Sunflower Mince ‘Meat’balls

Ingredients:

  • 75g Sunflower Mince (hydrated with miso and water or stock)
  • 260g Butter Beans
  • 100g Oats (preferably porridge/rolled)
  • 2 Garlic Cloves
  • 1 Onion, Diced
  • 2 Tbsp Tomato Paste
  • 2 Tbsp Ground Flax
  • 2 Tbsp Sunflower Oil
  • 1 tsp Oregano
  • 1 tsp Curry
  • 1 tsp Smoked Paprika
  • 1/2 tsp Chili
  • 1/2 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Turmeric

Directions:

  1. Add all ingredients except the Sunflower Mince in a blender or food processor and blend until the texture is uniform.
  2. Pour the Sunflower Mince into a bowl and add the blended ingredients. Mix thoroughly.
  3. Take small bits and roll them into a ball. Tip: using a cookie scoop helps to make them the same size
  4. Add sunflower oil to a stovetop pan on medium heat. Brown the balls on all sides until golden.
  5. Bake at 200C for 10 minutes.
